The hardest part was controlling the temperature; excessive heat causes vanillin to evaporate, stripping away the soul, while insufficient heat fails to evoke its deep warmth. When I first tasted that forest-like depth and cloud-like lightness in my own cake, I felt deeply that reverence for ingredients is the greatest sincerity one can offer the diner.
