I still vividly recall the astonishment I felt when I first encountered a high-quality Madagascar vanilla bean. In the past, I had tried vanilla extract, but it always felt like something was missing. It wasn’t until I personally split open that oily pod and scraped out the plump vanilla seeds that the natural, profound fragrance made me realize this was the “true taste” that desserts should possess. Beneath the ancient red brick walls, time seems to slow down. The curing of vanilla beans takes time, as does the development of dessert flavors. I clean and dry the used vanilla pods, placing them into a sugar jar to create vanilla sugar, allowing their lingering essence to continue shining in daily life.
No rush, no haste. Good ingredients need time to grow, to mature, to release their deepest fragrance. When all is ready, that pure essence will naturally blossom into the most captivating flavor on the tongue, stirring the heart.
