In my studio within the Changhua Sanheyuan, sunlight gently bathes my workbench. I pick up a Madagascar vanilla bean, my fingertips tracing its oily, supple skin. Taking a deep breath, that warm, complex sweetness wafts through my nostrils, as if traveling across vast oceans, condensing the passion of the Madagascar island and the sediment of time into this small, dark treasure. It is not merely a spice, but the soulful whisper of dessert, representing “Hana no Oka’s” unwavering dedication to pure flavor.

一、 香草的黑金:馬達加斯加風土的贈禮

馬達加斯加香草莢,被譽為「黑色黃金」,其獨特的風味源自於馬達加斯加島得天獨厚的風土與精湛的傳統製程。這裡的波旁香草(Bourbon Vanilla),是香草蘭花(Vanilla planifolia)經過人工授粉,歷經數月生長,再由當地農民以世代相傳的「殺菁、發酵、乾燥、熟成」等繁複手工工藝精心處理而成。每一根香草莢都承載著陽光、雨露與匠人的心血,其深邃的香氣層次,從焦糖、奶油、木質到花果香,皆是其他香料難以比擬的。

During the transition from “Breadcrumb Handmade House” to “Hana no Oka,” I experimented with many commercial vanilla extracts, but they always lacked a certain “vitality.” It wasn’t until I insisted on using whole natural vanilla beans—personally slicing them open and scraping out the black-pearl-like seeds—that I realized true deliciousness stems from a reverence for nature. Selecting high-quality vanilla beans is incredibly challenging; one must observe their oiliness, elasticity, and the purity of their scent. The first time I incorporated well-cured vanilla beans into my cake recipe, watching those tiny black specks scatter through the golden batter, I felt a long-lost sense of serenity and fulfillment—this is the most honest conversation between a chef and their ingredients.

結語:時間淬鍊的純粹

Beneath the red brick walls of the Sanheyuan, I have learned the art of waiting. The aroma of vanilla requires time to mature, and a perfect dessert similarly demands patient refinement. No rush, no hurry. Fine ingredients need time to settle in tranquility. When everything is ready, that purity will naturally blossom upon the tongue.
