Especially when I gently pick up those dark, lustrous, slightly moist Madagascar vanilla beans, a profound and warm aroma slowly permeates the entire space. It’s not an ostentatious sweetness, but a complex, alluring fragrance with woody and caramel undertones, as if narrating the sunshine and rain of distant islands, and the wisdom accumulated over time. This is the enduring commitment of the “Hana no Oka” dessert laboratory, carried over from the days of “Breadcrumb Handmade House”—the belief that the soul of every dessert stems from the purest respect and exploration of ingredients.
一、 尋找純粹的香氣:馬達加斯加的風土與工藝

In my early days of pursuing “additive-free” baking, I tried many commercial vanilla extracts, but they always lacked a certain “vitality.” It wasn’t until I decided to source vanilla beans directly from their origin and observe their luster and elasticity under the sunlight of the Sanheyuan that I realized true deliciousness comes from compromising with and waiting for nature. The hardest part was mastering the curing time; too fast and the aroma was thin, too slow and it could develop an over-fermented scent. When I first folded the hand-scraped seeds into a cake, watching those tiny black specks dance in the milky white batter, the sense of achievement in mastering the ingredient, coupled with the ensuing warm aroma, made me deeply feel that cooking is not about fighting the ingredients, but about listening to their voice.
