In the afternoon, the sunlight slants across the red brick walls of the Sanheyuan, staining a corner of the studio in a warm amber hue. I gently open the sealed glass jar, and an intense, mellow, slightly sweet woody aroma instantly fills the air. These are vanilla beans from Madagascar—dark, plump, like pieces of art where time has been frozen. Touching their soft yet resilient texture, I can always feel a vitality that has crossed oceans. In this moment, all the noise vanishes, leaving only a pure dialogue with the ingredient.

I remember the shock of the first time I sliced open a high-quality vanilla bean and scraped those tiny black seeds into the cream—that natural, irregular, earthy aroma is something no laboratory synthesis can replace. Although the cost of sourcing premium vanilla beans is high and the processing is tedious, when I see the look of surprise and satisfaction in a customer’s eyes after a bite of cake, I know that persistence in ingredient quality is never in vain.

No rush, no haste. Great ingredients need time to settle in the soil and wind, and to mature through temperature and time. When everything is ready, that purity will naturally blossom on the palate.
