As the afternoon sunlight slants across the red brick walls of the Sanheyuan, painting the air in the studio with a warm golden hue, I gently slice open a dark brown Madagascar vanilla bean. In that instant, a rich, woody sweetness slowly diffuses through the air, as if transporting me from this old house in Changhua to a distant island in the Indian Ocean. This fragrance is the pure light I most adore within the “Hana no Oka” laboratory.
Vanilla is not merely a seasoning, but a complex botanical miracle. The Madagascar Bourbon Vanilla we select derives its name from the island of Bourbon, rather than the liquor. These orchids require meticulous hand-pollination during growth, but the most critical stage is the “curing” process after harvest. Fresh pods are initially scentless; they must undergo months of killing, fermenting, and drying to convert glucose into vanillin, creating that deep and layered sweetness.
From the laboratory’s perspective, vanilla beans do more than provide flavor; they act as a “flavor bridge” in baking. Vanillin is highly volatile, yet it binds perfectly with fats such as butter and heavy cream. When we infuse vanilla seeds into heated cream, the fats encapsulate and stabilize the aroma molecules, preventing them from evaporating too quickly under the oven’s high heat. Furthermore, the mellow warmth of vanilla neutralizes the cloying sweetness of sugar and enhances the emulsification of dairy products, allowing the cake’s texture to present a rounded and three-dimensional layer on the palate.
When discussing the ultimate application of vanilla, the French pastry cream (Crème Pâtissière) is a prime example. In classic Profiteroles, the vanilla bean is the soul that determines success or failure. When tiny black seeds are scattered throughout the creamy white custard, they not only serve as a visual marker of a commitment to “all-natural” ingredients but also create a sensory surprise. In every bite of rich cream, capturing the burst of a vanilla seed transforms simple sweetness into a deep forest aroma—a reflection of the French pastry’s pursuit of ingredient perfection.
During the transition from “Breadcrumb Handmade House” to “Hana no Oka,” I experimented with various commercial vanilla extracts and pastes, but something always felt missing. It was a monotony masked by chemical synthetics. It wasn’t until I insisted on using whole vanilla beans, enduring the tedious process of scraping the seeds, that I realized true vanilla has a “breath.” It possesses a fresh top note, a mellow heart, and a woody base. Although costs increased significantly and the process became time-consuming, when I see those tiny black specks in the finished cake, I know that this reverence for nature will be felt by the eater.
In the slow passage of time within the Sanheyuan, I have learned to wait. Vanilla beans need time to cure, and our exploration of gastronomy needs time to settle. No rush, no hurry. Good ingredients need time to draw nutrients from the soil and mature quietly in the shade. When everything is ready, that purity will naturally bloom on the tip of the tongue, becoming the gentlest of comforts.
