In the afternoon of the Sanheyuan, the sunlight slants across the red brick walls, painting the studio in a warm golden hue. I gently open the sealed glass jar, and an intense, deep, and slightly sweet woody aroma instantly permeates the air. These are vanilla beans from Madagascar—dark, glossy, and plump, with a moist, oily texture felt at the fingertips. In the “Hana no Oka” laboratory, vanilla is more than just a flavoring; it is like a precipitation of time, condensing the sunlight and rain of a distant tropical rainforest into these slender black pods.

Vanilla (Vanilla planifolia) seeds are hailed as “black gold” in the baking world. We choose the Madagascar region because its soil and climate endow the vanilla with the most quintessential “Bourbon” profile. This does not refer to bourbon whiskey, but rather a specific curing process: the harvested green pods undergo blanching, fermentation, and several months of shade-drying. During this process, the chemical components within the pod undergo a drastic transformation, evolving from a simple scent into a complex bouquet of cream, floral notes, and warm spice.

From a scientific perspective, the core of the vanilla bean lies in “Vanillin.” When we scrape the seeds and infuse them into butter or milk, the fats capture these volatile aromatic molecules. During the high-temperature baking process, vanillin interacts with the proteins and fats in the cake, effectively neutralizing the eggy scent and enhancing the sweetness of dairy products. More importantly, natural vanilla beans contain over 200 aromatic compounds, creating a world of difference compared to synthetic vanilla extract—the former is three-dimensional and layered, while the latter is merely a flat, singular sweetness.

若要論及香草的極致運用,法式香 custard(Crème Pâtissière)絕對是不可或缺的舞台。

When discussing the ultimate application of vanilla, the French pastry cream (Crème Pâtissière) is an indispensable stage. In classic Profiteroles, the vanilla bean acts as the “tonal anchor.” As the thick milk is slowly heated, the vanilla seeds dance within, combining with egg yolks and sugar to form a filling that is exceptionally silky and deep. The moment it hits the palate, there is first a light creaminess, followed by a profound vanilla aftertaste, elevating a simple dessert to the height of art. Whether in a Parisian street shop or a Michelin-starred restaurant, the insistence on natural vanilla seeds is a mark of respect for the soul of French pastry.

During the transition from “Breadcrumb Handmade House” to “Hana no Oka,” I experimented with almost every grade of vanilla available on the market. I remember a time when, in pursuit of cost-efficiency, I used high-quality vanilla paste; while the flavor was close, the final product lacked those “lively black specks” and the layered lingering finish. I realized that true craftsmanship lies in non-compromise. Although scraping seeds by hand is incredibly time-consuming and premium pods are expensive, when I see the tiny black dots scattered in the cake’s cross-section and witness a customer close their eyes and breathe deeply after a bite, I know every struggle was worth it. The purity of ingredients allows the taster to feel the warmth of the maker.

In the tranquility of the Sanheyuan, I examine these black pods once more. They have crossed oceans and endured long periods of fermentation and drying before arriving in my laboratory. Baking is, in essence, a practice of time; we cannot force the aroma to burst instantly, but should instead learn to wait for the ingredients to bloom slowly under the heat.

No rush, no haste. Good ingredients need time to mature in silence. When everything is ready, that purity will naturally tell a story of distant lands and artisanal devotion upon the tip of the tongue.
